refactor(shell): collapse managed tree back into stubs

Drop ~/.config/zsh/{env,interactive,login} modules. PATH and local.zsh
live in .zshenv; interactive UX is a single .zshrc again. Deploy only
installs the three stubs and removes obsolete trees/examples.
